Could also just use jitsi or NC and do a GPU screen record at the same time

@Simon I just found out I can stream the jitsi meeting to YouTube which will also record it. I haven't tested it yet but seems like a good option.

Edit: The recording option was there all along, just not in Firefox... I had to switch to Chrome. So we can use Jitsi

Here's a jitsi link. I tested the recording feature yesterday, it looks like it doesn't have the focus on current speaker feature that Zoom has so I'll just record the grid.
